Today i had a sickie on my hands, so i decided that comfort food was a MUST HAVE for dinner. I decided to go with my new feel-good soup recipe from an LM friend(geomamma). I had never made or imagined making soup that has ground beef in it(other than chili)...but it is truly an amazing recipe.
This is how she says to make it:
"Oh gosh, you can't screw this up. I'll lay it out for you.
Brown the ground beef then drain the fat. Throw in a chopped onion.
Add a can of diced tomatoes (the large cans - 28oz). I like the ones with herbs and spice.
Add some water or a can of beef or vegetable broth.
Add a few handfuls of frozen mixed vegetables or whatever veggies you like.
Add a handful of small diced potatoes.
If you need more liquid add water or broth.
Throw in some salt, pepper, oregano or some other spice you like.
Done. It is best the next day. I am simmering it right now for supper tonight."
