Foodie Friday!

I'm not really too sure what came over me today, but it was a GREAT day when it came to food!
I had a friend coming over to knit, so i decided to get creative and make some whole wheat lemon blueberry muffins! They were a tad on the healthy side(re: dry bottoms!), but the other 3/4 of the muffin was QUITE tasty!!
You can check out the recipe HERE..(instead of the whole 1/2 cup oil, i used 1/4 cup oil and 1/4 cup applesauce)
Then later for dinner i had promised the girls make-your-own pizza night to go with our movie. So i decided to brave making the pizza crust(i have a HORRIBLE track record for making yeasty products!). I ended up making an herb and garlic crust, and I think i may have over-rolled the dough, but regardless it still turned out pretty awesome, and I think the new household fave is definitely spinach/pepperoni pizza! (we would have added mushrooms too, but apparently they were in the fridge too long. boo)
For a bedtime snack we had yummy watermelon! # of us had it cut up, but Hero decided to ask for a slice that turned out bigger than her HEAD! lol. She even ate it all!

And tonight, well, the good eating went out the window...here's my pretty knitting that i'm working on..can you spot my snack?? lol.

I love making homemade pizza. We use fresh roma tomatoes instead of sauce and we use artichoke hearts, kalamata olives and stuff like red peppers or sun dried tomatoes. We're a big fan of the Mediterranean flavor. Also I've been making this really tasty veggie lasagna.. yum! Leftovers last all week. BTW found you on the blog hop and we are a new follower via GFC :)

Hi! I love Reese's - not so great at knitting but eating Reese's I can do. LOL

I have been making my own guacomole lately and love it. Instead of lime juice I use lemon and I like it now - always thought guac tasted like lysol not anymore :)
