Watermelon Blogger Challenge: Healthy Pink Princess Breakfast Cakes #NWPM

I recently received a really cool watermelon blogger kit to participate in the "first-ever kid-tastic Watermelon Blogger Challenge". I decided to go with creating a kid-friendly recipe using watermelon. Here is what we came up with.
It was really fun to create and have fun with my family while making a healthy but cool breakfast!


So we started out by whipping up some pancake batter..and to give it a bit of fruity princess flair we added in some strawberry puree(aka 1 small jar of strawberry baby puree). This kicks up the healthy factor and keeps out the fruit chunks that Orangie refuses to eat! We also added some red food colour to make them more pink! Just cook up the pancakes like normal only keeping them on the smaller kid-friendly size..


So while the mr was frying up our pancakes, I had Orangie helping me out making fun watermelon cut-outs for other aspects of our 'cake'.

 
On the other side of the kitchen I had Hero set-up making the 'candles' for on our 'cake'. She is skewering blueberries and watermelon teddybear cut-outs onto toothpicks.
 
 
Now it's time to assemble them! Stack 2 pink pancakes, add on watermelon flower, a dollop of vanilla yogurt, a few sprinkles, and a fruit 'candle'! Voila! Healthy kid-friendly FUN breakfast!
 
 
Now, Orangie decided her food couldn't be eaten this way..so she took it apart and dunked her pancake in the yogurt! Phew! She LOVED it! Actually we all LOVED this breakfast!
 


Oh! and before I go..here's a shot of the girls in the aprons from the kit! they LOVE them!

That looks like a lot of fun! Sadly my kids aren't really watermelon eaters but they do love to spruce up their pancakes! I especially liked the 'candles'. ;)

Wow, I would never have thought of adding baby food to pancake mix for flavour! I love the idea of using the watermelon in place of syrups!
