From Farm to Freezer: Zucchini

So this is the first of a series I'm going to do thanks to a few awesome readers asking me about the next step..I've bought all these veggies at the u-pick farm...NOW WHAT?!
 
( note: I do not claim to be an expert, this is the first year that I've tried this - with the help of my friend Google (lol), I'm just really hoping for the best and that I can save my family some money! )


So here is what I do with the zucchini's!

1. Wash your zucchini's.

2. Cut or Shred, or do both to your zucchini. I do both because I like the cut up chunks for spaghetti sauce or other recipes, and I love the shredded for loaves, brownies, etc.

3. Label and date your freezer bags, and then load them up with the zucchini . This is where you'll have to look ahead and see how much you would need for certain recipes. For my chunks I tend to cut up one average zucchini..and for shredded I do about 2.5 or 3 cups. Then you'll want to put a straw in the bag and suck out the air and quickly zip the bag shut. Less air means less frost/freezerburn.

4. Freeze! ( i can't seem to find any info on how long you can keep it in your freezer, sorry..I'm not too concerned because I know that I'll likely run out of frozen zucchini after a couple months!)

Note: There is mixed info out there on whether or not you should blanch your zucchini before freezing(when you do the chunk cuts)..I've heard personally that the cut n freeze method works fine, so i'm gonna go easy and see how it works for me!

good idea I have stocked up on tomatoes and jalapeƱo this year :) I didn't get any zucchini this year

OH MY GOSH!!! LOL! I was doing the exact same thing as you this weekend! We could have had a zucchini freezing party! ;) I shredded 12 freezer bags of zucchini and quartered 8 freezer bags of zucchini. We have zucchini coming out of our ears! They did really well in the garden this year. Next up...butternut squash!

I haven't been able to convince my kids to try this yet but we'll get there. We have been becoming more dollar conscious as a family lately and storing food is definitely on our list as well!

I love the idea of freezing ready prepped veggies! My mom and I always dice red and green peppers, and slice too, so it's easy to take proportioned bags out of freezer and throw them in sauces and cooking :)
