Yum! Whole Wheat Peanut Butter Oatmeal Cookies! #NationalPeanutButterDay

You didn't think I'd let #NationalPeanutButterDay go by without baking something did you??
The challenge was to find a decent recipe using whole wheat flour though, as the mr made a boo-boo when grocery shopping and bought whole wheat flour instead of the all-purpose that we needed.
Anywho..none of the recipes were quite to my liking so I took a bit from this and bit from that and came up with these pretty darn delicious cookies!
They're soft, and light, and the bonus is that they don't have that bleh whole wheat flour aftertaste!

 * The recipe doesn't call for M&M's, I decided to use up leftover candies by putting one on top of each cookie*
 
 
Whole Wheat Peanut Butter Oatmeal Cookies
(yield: about 24 decent-sized/large cookies)
 
Ingredients:
1 cup butter
1 cup peanut butter
1 1/3 cups brown sugar
2 eggs
1 1/4 tsp vanilla extract
2 cups quick oats
1 1/3 cups whole wheat flour
1 1/4 tsp baking soda
 
1. Preheat oven to 350 degrees F (180 C)
2. In a mixing bowl, cream the butter and peanut butter. Add the brown sugar, eggs, and vanilla; mix well.
3. Combine oats, flour, baking soda; add to the creamed mixture and mix well.
4. Drop by the rounded tablespoonful onto ungreased baking sheet. Flatten with fork. Bake for 11 minutes OR until done.

(Note: I use a silicone liner on top of my baking sheets to protect the bottom of the cookies from overcooking)

And at the chance of looking annoying. I work at a radio station and we have this about Peanut Butter Day....
Peanut Butter Day”, unless someone in the house is at risk of anaphylactic shock from an allergy. Originally called ‘nutmeal’, peanut butter has only been around for about 120 years but it’s a staple in 85% of homes and we eat about 3 lbs per person per year. If you have arachibutyrophobia, you’re afraid of peanut butter sticking to the roof of your mouth!

These sound yummy. I'm not a fan of cooking with whole wheat flour (I typically add some ground flax seed to recipes with regular flour instead)but I am a sucker for anything with peanut butter. I love oatmeal too.

Yummy these cookies look delicious, and whole wheat even better!My kids love peanut butter cookies.I wonder would they know the difference if I made them with whole wheat, def have to give it a try, thanks for sharing

How did I miss National Peanut Butter day?? I will celebrate late with a batch of these cookies. Your recipe look WAY better than the generic boring one from the peanut butter jar!

Yummers! Cooking with whole wheat flour can be hard because it's drier and recipes usually need more moisture added to compensate. I'll have to try these; I LOVE the nutrition of whole wheat flour so finding a good recipe that uses it is always a plus!

Oh my gosh - these look good! My little guy is allergic to peanuts so we avoid having them in the house but these cookies look really good.

peanut butter oatmeal our one of our favourites here too, sadly we don't make them very often since they can't go in school lunches. kinda have the craving for them now though!

Those looks delish will definitely have to make these! I didn't know it was national peanut butter day but on the 27th was national chocolate cake day and I did complete that mission lol.

Okay where have I been? I've never heard of National Peanut Butter Day!! Homemade peanut butter cookies are great on any day. My mom makes the best peanut butter cookies but she has never made them with oatmeal. I think these would be so good. I'm going to make these and take some to her. She will be so surprised! Thank you for this nice recipe :)
