Orangie and I took to the kitchen today. It was time we got our bake on again! :)
This time we needed to use up some over-ripe bananas ASAP!
So we whipped up some Banana Oatmeal Chocolate Chip cookies!
We all got what we wanted...I got the filling and healthy of oatmeal and banana, and the girls got the chocolate! ;)
BANANA OATMEAL CHOCOLATE CHIP COOKIES
- 3/4 cup butter
- 1 cup brown sugar
- 1 egg
- 2 large overripe bananas
- 1 tsp vanilla
- 1 cup flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 3 cups oats
- 1 cup chocolate chips
- Preheat the oven to 350 F. Grease baking sheet (or line w silpat)
- In a large bowl, cream together butter and brown sugar. Beat in egg and mashed banana, then stir in vanilla. Combine flour, baking soda, cinnamon; stir into the banana mixture. Mix in rolled oats and chocolate chips. Drop by rounded spoonfuls onto prepared cookie sheets. Leave room for spreading. (I pushed mine down with the back of the spoon a little bit)
- Bake for approximately 8 minutes. I carefully transferred mine to a cooling rack immediately as I really like soft cookies.
